Embark on an ultra-exclusive, one-night only gastronomic experience on April 23 celebrating the Macau debut of three-Michelin-starred maestro Umberto Bombana’s wines, developed in partnership with visionary winemaker Enrico Togni Rebaioli. Discover the best of Italian gastronomy through Chef Bombana and Executive Chef Marino D’Antonio’s collaboration menu, tailormade to match Chef Bombana’s handpicked bottles.

A trailblazer in viticulture, Enrico Togni restored his grandfather’s vineyards in Italy’s first UNESCO world heritage site Val Camonica, unleashing the beauty of the terroir through local grapes, including the incredibly rare Erbanno. Enrico’s unique wines and commitment to organic and biodynamic practices have drawn the attention of Chef Bombana who became a partner in 2024.

From refreshing Tuna Tartare to Homemade Tagliatelle with Mayura Beef Ragout, each dish is a culinary revelation, masterfully crafted to complement the unique labels of Togni Rebaioli. The menu sees the Macau debut of “R 8½”, a delicate expression of Nebbiolo Riserva and an elegant tribute to Maestro Bombana’s restaurants. Blossoming with alpine freshness, this wine makes a perfect match for the herbs-infused Baby Lamb from Aveyron. Then there is the rosato “Martina”—made from the Erbanno grape—to impart a delicate freshness to sweet white asparagus. Restaurant Manager Vincenzo Stratoti of 8½ Otto e Mezzo BOMBANA, Hong Kong will also be there to share with you the stories behind each ingenious pairing.
